In celebration of our 30th Anniversary in 2023, we have prepared a stellar line up of chefs for this year's The Chef Series. Our first guest chef was one Michelin-starred Chef Tom Aikens of Muse by Tom Aikens who visited in December to serve a number of exclusive dinners involving bold, astoundingly creative dishes at our magical rainforest resort. Chef Tom Aikens prepared a degustation menu displaying his characteristic creative flair and verve, using ingredients from our onsite Garden. The diners indulged in this exclusive dinner at The Dining Room, our fine dining venue with a magnificent rainforest backdrop, surrounded by the aromatic scents and subtle sounds of nature all around us. Chef Tom prepared Ricotta with honey accompanied by truffle and leak, wood roasted mousseline soup, elegantly served confit salmon and a deliciously tender lamb loin. For dessert, Chef Tom impressed diners with his white chocolate with lime and basil, and, finally, a mini lemon tarte and pistachio praline for a lovely end of a spectacular dinner.
