As part of our 30th Anniversary celebration, we have prepared a stellar line up of chefs for this year's The Chef Series. Our second guest chef was two Michelin-starred Chef Arnaud Faye of la Chèvre d'Or who visited in February 2023 to prepare a number of exclusive dinners involving bold, astoundingly creative dishes at our magical rainforest resort. Chef Arnaud Fayes created a unique French haute cuisine Degustation Menu, exclusively created for The Datai Langkawi, in the midst of our mystical rainforest at our fine dining restaurant, The Dining Room. Chef Faye’s distinctive culinary style embraces a classic mode and highlights his hallmark qualities of knowledge, precision, discipline and pursuit of perfection from our onsite Garden.
The course started off with a refreshing escabèche of hamachi, marinated in vinegar and oil. Served alongside is a fennel sorbet, spooned on a crunchy bed of fennel with subtly savoury bottarga. A celeriac risotto style, in which morsels of the root vegetables replace grains of Arborio rice followed through with a beautiful texture and savory flavour. One of the most colourful dishes served was the octopus, preserved with olive oil, beetroot declination scented with rose from Grasse. As a wonderful end to the dinner, Chef prepared a Chocolate great vintage with citrus and cognac. It was certainly a marvellous gastronomical experience for the diners in the pristine rainforest paradise setting.
